margin-left: 0px; margin-right: 0px; margin-top: 0px;">As I'm sure you know, oranges are a great source of vitamin C. However, all citrus fruits as well as many other fruits and vegetables offer significant amounts of vitamin C. Here are a few examples of foods and the amount of vitamin C they contain:

Red Bell Pepper (1/2 cup) - 140mg

Medium Orange - 70mg

Strawberries (1/2 cup) - 50mg

What does it do?

Helps to produce collagen, a connective tissue that strengthens muscles, bones, and other tissues so it helps with cuts and wounds.

Helps keep capillary walls and blood vessels firm, protecting you from bruising.

Helps with iron and folate absorption from plant sources of food.

Protects from infection by stimulating the formation of antibodies.

Works as an antioxidant to inhibit damage to body cells.

Essential for many metabolic reactions.

What if you don't get enough?

Ever heard of scurvy? A strange disease plagued sailors and pirates alike several hundred years ago. A Brittish surgeon recommended stocking ships with lemons, oranges, and limes, lending the nickname "limeys" to to Brittish sailors. This provided a cure because citrus fruits contain abundant amounts of vitamin C, a deficiency of which is the cause of scurvy. Symptoms of scurvy include:

Loose teeth.

Dryness in mouth and eyes.

Swollen gums.

Loss of hair.

Poor wound healing.

Excessive bleeding.

Scurvy is not common in the developed world but deficiency can occur in people that don't eat vegetables or fruit, alcoholics, the elderly, and severely ill individuals. Signs that you're not getting enough may include:

Poor wound healing

Frequent colds or infections

Lung-related problems

What if you get too much?

Most of the excess will be excreted in you urine.

Abdominal pain and diarrhea.

May contribute to kidney stones.

Iron toxicity for those with disorders of iron metabolism.

<div style="margin-bottom: 0px; People who explicitly make resolutions are 10 times more likely to attain their goals than people who don't explicitly make resolutions.

So if you've made resolutions, great! If not, don't worry, you can set goals for yourself any time of the year. The best way to ensure you reach your goals is to make them SMART:
Specific: don't make your goal too general. Instead of saying 'get healthy', say 'lower my cholesterol'
Measurable: how will you know if you have reached your goal? What do you want your cholesterol level to be?
Attainable: don't waste your time with impossible goals. If you want to lose weight, don't think you are going to go from a size 20 to a size 4 in a couple of months.
Rewarding: make sure you have a reason to set this goal, otherwise you won't be motivated. What will lower cholesterol or weight loss bring you? Long term health can be your reward.
Time-Framed: set a deadline and mini deadlines. If weight loss is your goal, you could aim for 1-2 pounds per week, and up to 10% of your weight over 6 months.

And the winner is...
Anonymous had the closest guess.
Congratulations Anonymous, your are officially a Combine the soy sauce, sesame oil, and white wine in a bowl. Add the chicken and stir to coat. Cover and refrigerate for an hour or so.
2. Place vegetable oil in a wok and turn heat on to high. Add the Kung Paos and cook until they begin to darken - this happens quickly. Add garlic, ginger and crushed black pepper, and cook for about a minute. Add the green onions and red bell pepper.
3. Add the chicken and marinade to the wok. Stir-fry until the meat is no longer visibly pink. Add rice wine vinegar and sugar. Stir the cornstarch into the chicken broth and add it to the wok. Stir until slightly thickened. 4. Serve over rice.

Hint: This stuff is yummier and the sauce will be thicker if you refrigerate and reheat to serve the next day.

Nutrition Information:
Number of Servings: 4
Serving Size: 3/4 cup
MyPyramid contribution per serving:
1/4 cup Vegetables (1/2 cup other veggies)
4 ounces Meat and Beans
2 teaspoons Oils
30 Discresionary Calories

Grains

Any food made from wheat, rice, oats, cornmeal, barley or another cereal grain is a grain product. Bread, pasta, oatmeal, breakfast cereals, tortillas, and grits are examples of foods in the grains group.

Grains are divided into 2 subgroups, whole grains and refined grains. At least half of all of the grains eaten should be whole grains.

Whole grains contain the entire grain kernel: the bran, germ, and endosperm. Examples include:
whole-wheat flour, bulgur (cracked wheat), oatmeal, whole cornmeal, popcorn, and brown rice.

Refined grains have been milled, a process that removes the bran and germ. This is done to give grains a finer texture and improve their shelf life, but it also removes dietary fiber, iron, and many B vitamins. Some examples of refined grain products are white flour, degermed cornmeal, white bread, white rice.

Most refined grains are enriched. This means certain B vitamins (thiamin, riboflavin, niacin, folic acid) and iron are added back after processing. Fiber is not added back to enriched grains. Check the ingredient list on refined grain products to make sure that the word “enriched” is included in the grain name. Some food products are made from mixtures of whole grains and refined grains. Look for ingredient lists where whole grains are listed before enriched grains.

In general, 1 slice of bread, 1 cup of ready-to-eat cereal, or ½ cup of cooked rice, cooked pasta, or cooked cereal can be considered as 1 ounce equivalent from the grains group.

What is your favorite way to incorporate whole grains into your diet?

Food for Thought - check the label

What does it do?

Promotes the absorption of calcium and phosphorus and regulates how much calcium remains in the blood.

Helps deposit these minerals in bones and teeth.

Helps regulate cell growth.

Involved in nerve and muscle function.

Plays a role in immunity.

May help protect against high blood pressure.

What if you don't get enough?

Loss of bone mass as you age (osteoporosis).

Softening bones (osteomalacia).

Rickets or defective bone growth in children.

What if you get too much?

Kidney stones or kidney damage.

Weak muscles and bones.

Excessive bleeding.

How much do you need?

Everyone under the age of 50: 5 micrograms or 200 IU

Adults over the age of 50: 10 micrograms or 400 IU

Adults over the age of 70: 15 micrograms or 600 IU

Where can I get more information?
Check out these great resources:

Get your D

Vitamin D Council

Vitamin D UV Calculator

Vitamin D DRI Report (only for the excessively curious)

And the winner is...
Marc was the first to guess correctly - I mean, can you really go wrong with a dinner of peanut butter and banana?

Ingredients:
1 Cup Peanut Butter
1/4 (6 ounce) can Tomato Paste*
1 (10 ounce) can Diced Tomatoes With Green Chile Peppers
2 cups Chicken Broth**
1 Tbsp Vegetable Oil
3 Boneless, Skinless Chicken Thighs, cubed
1/2 Onion, chopped
1/4 cup Fresh Mushrooms, sliced
Cayenne Pepper

*Why they don't make smaller cans of tomato paste I will never understand, but you can freeze any unused portion in a ziplock bag.

**I'm too lazy to make my own chicken broth so I just use bouillon but if you have homemade, even better!

Directions:
1. Melt peanut butter in a large pot over medium heat. Stir in tomato paste, and blend with peanut butter.
2. Mix in diced tomatoes with green chile peppers and chicken broth. Cook 15 minutes, stirring occasionally.
3. Heat oil in a medium skillet over medium heat. Saute chicken and onions until chicken is no longer pink.
4. Add chicken, onions, and mushrooms into the peanut butter mixture, and continue cooking for about 15 minutes, stirring occasionally.
5. Season to taste with cayenne pepper.

You could easily add some more veggies to this and I wish I had (but not becauase it wasn't totally yummy already). I think next time I'll try adding more mushrooms, carrots, and bell peppers.

Nutrition Information:
Number of Servings: 6
Serving Size: 2/3 cup
MyPyramid contribution per serving:
1/2 cup Vegetables (1/2 cup other veggies)

4 ounces Meat and Beans

6 teaspoons Oils

Plantain Fufu

This time of year, I tend to like eating alot of warm starchy comfort foods. But honestly, pasta, potatoes, perogies, and rice are getting a little old. My friend Kimberly sent me this link to recipes from fruitsandveggiesmatter.gov and I was excited by the first recipe for fufu so I gave it a try and may I say...yum! It's alot like mashed potatoes but with a sweet, banana-y flavor.

Ingredients:
5 Cups Water
4 Ripe Plantains*

*Plantains look much like bananas but are ripe when their peels turn black. Green and yellow plantains can also be used for other purposes.

This is super simple but you can add other ingredients too if you want to add more flavor but I loved it plain. Try minced garlic, orange juice, or fresh mint.

Directions:
1. Peel plantains and slice into 1-inch pieces.
2. Bring water to a boil. Add plantain pieces and cook on medium-high for 20 minutes.
3. The product those ingredients belong to is Nestle Toll House Refrigerated Sugar Cookie Dough.

What the ingredients mean:
Bleached enriched flour - not whole wheat, but some vitamins and minerals are added back, not the fiber, healthy fats, protein, and phytonutrients though, which is sad because phytonutrients have magical powers
Sugar
Partially hydrogenated soybean and cottonseed oils - trans fats
Water - this is a very important nutrient
Margarine
 (Soybean oil
Partially hydrogenated soybean oil - oh look, more trans fats
 Water
 Salt
Whey - by-product of cheese production
Soy lecithin - it's an emulsifier so it keeps the dough all mixed together instead of separating
Mono- and diglycerides - more emulsifiers
 Artificial flovor - shhh, it's a secret
Beta-carotene color - a carrot would be better, but might taste strange in a sugar cookie - maybe not
Vitamin A palmitate added - a synthetic form of vitamin A)
Eggs
Salt
Baking soda
Artificial flavors - more secrets`

Is there a better choice?
Healthy Eats has an easy recipe for sugar cookies I really can't grow much of anything, but basil seems to really like me and it is still going strong in November. If you are looking for some lighter recipes to balance out the turkey dinner this week, I have just the thing for you! It is based off a bread salad recipe my mom gave me, but I've turned it into a pasta salad and it has become a go-to meal at my house because it is easy and yummylicious.

Ingredients:
2 Cups Fresh Basil
2 Cups Dry Bowtie Pasta
1/2 Cups Roasted Red Pepper Strips
1 Cup Cherry Tomatoes, halved, or Diced Tomato
1/4 Cup Capers
1/4 Cup Black Olives
1/2 Cup Bocconcini, or Shaved Parmesan or Feta

2 Cloves Garlic, minced
1/8 Cup Red Wine Vinegar
1/4 Cup Extra Virgin Olive Oil
1 tsp Anchovy Paste

You can add, remove, and substitute ingredients left, right, and center here. My husband likes it better with bocconcini and no olives while I quite like it with shaved Parmesan. It would also be fine without the anchovy paste but if you have some, it adds nice flavor.

Directions:
1. Cook the pasta. Drain and rinse in cold water. Add remaining ingredients from the first set.
2. Once the eggs are consumed, they develop into larvae which may migrate and form cysts in other tissues such as lungs, brain, or muscle. Cysts in the brain can result in headaches, seizures, confusion, or other neurologic symptoms. Cysts in the eyes may cause blindness and cysts on the spinal cord may cause muscle weakness or paralysis. Cysts in other tissues can be found via MRI or CT scans but are usually not treated. If there are symptoms related to cysts in the brain, corticosteroids may be given to reduce inflammation. These drugs are not used to treat cysts in the eye or spinal cord because they can trigger severe inflammation that can damage nearby tissues.

Tapeworm larvae can also be ingested by eating raw or undercooked meat. The larvae develop into adult tapeworms in the intestines and can measure up to 50 feet and survive as long as 20 years as a result of consuming foods you eat. Tapeworms in the intestines cause weight loss of 1 to 2 lbs per week but usually cause no other symptoms. However, they may cause upper abdominal discomfort, diarrhea, or loss of appetite. Fish tapeworms can cause anemia because they absorb vitamin B12. Intestinal tapeworms are diagnosed by testing stool samples and are treated with praziquantel.

Can you say easy diet plan?
<div class="separator" style="clear: both; Well, I actually went camping this past weekend at Garner State Park in Texas and my brother told me he recently went camping in Alberta, Canada. So I guess anytime of year can be camping time. It's not that I don't love camping - I do. But it can be dangerous if you aren't prepared. Based on my experiences, I recommend these survival tips to keep you happy and healthy while you're out in the bush.

Plan: Plan your menu meal by meal including snacks. Make sure you factor in all the dishes, utensils, condiments, cooking oil, and cookware. Bring extra baggies or plastic containers to pack leftovers or food for on the trails.

Trail mix: It's just not camping without it. I like a mix of salty and sweet, chewy and crunchy, spicy and mellow. Some of my favorite ingredients include mixed seeds and nuts, dried fruit pieces, banana chips, candy covered chocolate pieces, pretzels, Cheerios, Swedish Berries, Chinese rice crackers, and wasabi peas.

Ant hills: Don't step on them. Especially fire ant hills. Especially if you are wearing flip-flops.

Pre-cut veggies and fruits: These are great for eating when you are out on the trail and help to keep you hydrated and energized. Balance out trail mix and other high calorie camping foods with nutrient dense veggies and fruits

Activities: Stay active to help burn those extra calories. Try hiking, mountain biking, kayaking, exploring, swimming, frisbee, or a game of pick up.

Hot Chocolate: It's the perfect start and end to the day to keep you warm and happy. You could also try hot apple cider, tea, or juice crystals.

Do you have any other camping survival tips?

Quiz Answer

Diabetes With obesity on the rise, millions more are at risk of developing diabetes.

Are you at risk?
These are some of the factors that increase your risk for diabetes. If you have any of these risk factors, you should consider talking to your doctor about your risk and weather you should be tested.

45 years or older

BMI higher than 25

Parent, brother, or sister with diabetes

African American, Hispanic/Latino, American Indian, Asian American or Pacific Islander background

History of gestational diabetes or giving birth to a baby weighing 9 pounds or more

Higher than normal blood sugar levels

High blood pressure (above 140/90)

HDL cholesterol less than 35

Triglyceride level higher than 250

Physically activity less than three times a week

Polycystic ovary syndrome (PCOS)

How can you prevent diabetes?
Guess what? Although some of these risk factors are out of your control, you can change some of them. Recent studies have shown that people at high risk for type 2 diabetes can prevent or delay the onset of the disease by losing 5 to 7 percent of their body weight if overweight. You can do that by eating healthier and getting moderate physical activity for 150 minutes each week or vigorous physical activity for 75 minutes each week. For more information on how to prevent diabetes, check out the National Diabetes Education Program.

Do you already have diabetes?
If you have already been diagnosed with diabetes, talk to your doctor or a Registered Dietitian to help you determine the best course of action.

Want more information about diabetes?
Check out some of these great resources:
Diabetes Act Now
National Diabetes Education Program
American Diabetes Association
National Institute of Diabetes and Digestive and Kidney Diseases

And the winner is...

Jade! Then you need to figure out what counts as a serving in each group.

General rules for serving sizes for each food group

1 slice of bread, 1 cup of ready-to-eat cereal, or ½ cup of cooked rice, cooked pasta, or cooked cereal can be considered as 1 ounce equivalent from the grains group.

1 cup of raw or cooked vegetables or vegetable juice, or 2 cups of raw leafy greens can be considered as 1 cup from the vegetable group.

1 cup of fruit or 100% fruit juice, or ½ cup of dried fruit can be considered as 1 cup from the fruit group.

1 cup of milk or yogurt, 1 ½ ounces of natural cheese, or 2 ounces of processed cheese can be considered as 1 cup from the milk group.

1 ounce of meat, poultry or fish, ¼ cup cooked dry beans, 1 egg, 1 tablespoon of peanut butter, or ½ ounce of nuts or seeds can be considered as 1 ounce equivalent from the meat and beans group.

Be sure to check out the pages on Oils, Discretionary Calories, and Physical Activity too from the Inside the Pyramid print pages, especially the 'What counts as an ounce/cup/teaspoon/calorie?" pages. These pages can be conveniently be printed out to help guide you in your choices until you get the hang of it.

When I do the breakdown for my recipes, I consider every ingredient when I tell you what the MyPyramid contribution is. I do this just to make you aware that prepared foods cannot always fit into just one food group. For example, a cake contains ingredients from the grains group, but also potentially from the milk group, the fruit group, the meat and beans group, the oils group, and the discretionary calories group. The contribution to these groups is often small, but it is good to keep in mind so you don't go over your calorie allowance. If you don't have access to the recipe, or just want to do quick calculations, it is totally okay to just estimate.

Another way to estimate your intake from each of the food groups is to use the MyPyramid Planner tool. Simply enter your personal information and then enter the foods you ate or plan to eat. It will tell you how much your food choices contribute to each food group. Give the tool a try and let me know what food groups you did well on today and which ones you need to work on.

Quiz Answer

The answers are...
1. Oatmeal: Grains (specifically whole grain)
2. Almonds: Meat and Beans AND Oils
3. Ice Cream: Milk AND Discretionary Calories*
4. Beer: Discretionary Calories**
5. Corn: Vegetables (specifically starchy vegetables)***
6. Avocado: Fruits and Oils
7. Peanut Butter: Meat and Beans AND Oils AND Discretionary Calories if it contains added sugar or fats.
8. Eggs: Meat and Beans
9. Black Beans: Meat and Beans OR Vegetables (specifically dry beans and peas)****
10. Bananas: Fruits

* You know that ice cream is full of fat. Sadly this fat does not count as oils. The fat in ice cream, when separated from the water and other components is solid a room temperature - think butter. Oils are fats that are liquid at room temperature and contain essential fatty acids. They are found mainly in plant foods and in fish. Because these oils are necessary for health, there is an allowance for them in the food guide, separate from the discretionary calorie allowance. Fats, such as those found in ice cream, count toward discretionary calories. Fooducate wrote a great post yesterday explaining the ins and outs of oils so I'm not going to bother reinventing the wheel here, but check it out.

**I love that you guys tried to count beer as a grain. It is not. Although beer generally contains barley (a grain) and hops (a vegetable), these ingredients are in small enough quantities that counting them would be plain old furterating - a 12oz bottle of beer probably contains 1/100oz of barley - not worth counting. But that doesn't mean that is isn't totally okay for occasional consumption, assuming you are healthy. You just have to remember that it does count toward discretionary calories.

***Corn and potatoes are both considered starchy vegetables, not grains, even though they often serve similar purposes to grains because of their high starch content.

****Legumes such as black beans can count toward the Meat and Beans group or the Vegetables group - you can decide depending on what else you eat that day. This is because although they are technically vegetables, cooked dry beans and peas are excellent sources of plant protein, and provide other nutrients such as iron and zinc like meats, poultry, and fish. Many people consider dry beans and peas as vegetarian alternatives for meat. However, they are also excellent sources of dietary fiber and nutrients such as folate that are found in vegetables.

And the winner is...
Dad, with a total of 10 correct answers - this is assuming I did a good job of correcting, but there is a reason I'm not a teacher.

Quiz Time

To which food group do each of the following items belong? Check Inside the Pyramid to refresh your memory on the food groups and don't forget Discretionary Calories. Remember, a food may count toward more than one group. In a separate bowl, mix the flour, baking powder, salt, and cornmeal.

3. Alternate adding dry mixture and buttermilk to the creamed mixture, mixing lightly.

4. Bake in a greased loaf pan or muffin tin at 375 for about 40 minutes or until a toothpick inserted near the center comes out clean.

<div class="separator" style="clear: both; Because of this, they do contribute, if only a little, to other food groups.

Vegetarian Chili

<div class="separator" style="clear: both; Chili on Halloween is still one of the most important traditions for me and this is my oh-so-easy version.

Ingredients:
2 cans (about 15oz each) Diced or Petite Cut Tomatoes
1 can Mushrooms, Stems and Pieces
1 can Kidney beans, drained
1 can Blackeye Peas, drained
2 tsp Chili Powder
2 tsp Crushed Red Pepper Flakes
1 Cup Frozen Corn
1 Cup Green Bell Pepper, diced

When using canned vegetables, check the label for sodium content and make sure there is less than 20% Daily Value of sodium per serving. Compare a few different brands and pick the best one. Some companies are starting to make tomatoes with no salt added - a great choice.

Directions:
1. Dump all caned items into a large pot and add in chili powder and crushed red pepper flakes.
2. Bring to a boil, stirring ocassionally. Cover and reduce to a simmer for 30-60 minutes.
3. Stir in corn and bell pepper and continue to simmer for another 5 minutes.
4. Serve with rice, toast, dinner rolls, cornbread, or whatever you choose. I also love to melt a little bit of cheddar or American cheese on top.

This recipe is really just a guide because you can use whatever you have on hand and it will always turn out great. Make it your own by starting with a base of grilled diced onions and lean ground beef or turkey. Try different types of legumes such as chickpeas, pinto beans, lentils, or navy beans. Toss in red bell peppers, green peas, or diced carrots, whatever you like.

Nutrition Information:
Number of servings: 5
Serving size: 2 cup
MyPyramid contribution per serving:

1 1/2 cup Vegetables (1/4 cup starchy veggies, 1 1/4 cup other veggies)

1.5 ounces Meat and Beans or 1/2 cup Vegetables (dry beans and peas)*

*Legumes such as the blackeye peas and kidney beans in this recipe can count toward the Meat and Beans group or the Vegetables group - you can decide depending on what else you eat that day.

Quiz Answer

Your guesses were very close, but the correct answer to the ingredient quiz is Dark Chocolate Reese's Peanut Butter Cups. Can you say heart healthy?

**Garam masala can be tough to find but it is so worth it! Try in the spice section at your local grocery store first, but you may have to find a shop that focuses more on gourmet or ethnic foods.

Directions:

1. If the word 'hydrogenated' is in the list, it is not trans fat-free. If you can't find a brand that is trans fat-free, butter is usually a better choice.

Directions:
1.
